
I hope you all enjoyed a fantastic Eid holiday! We still have a few more weeks to go before the next break which means we have plenty of lunchboxes to prepare!
The say “we eat with our eyes” applies to everybody, but especially to kids. Well, today I´m bringing you some beautiful and nutritious pops that will certainly surprise them. Cauliflower is high in fiber and vitamin C and low in fat. It is a very nutritious vegetable that kids not always enjoy, but they will today! Let´s get started!
Ingredients: (for 20 pops)
- 20 lollipop sticks
- 1 small cauliflower
- 1 spf flour
- 30 g cheddar cheese
- ½ cup of milk
- olive oil
- A pinch of salt
- 1 egg
- Bread crumbs
Method:
Cut the cauliflower into small pieces and boil in salty water until soft. Mash with a fork and place in a pan with the olive oil. Stir and add the flour, lower the heat and keep stirring. Now little by little add the milk and finally the cheese – this whole process will only take you about 15 minutes, or less if you boil the cauliflower in a pressure cooker. The result should be a creamy but consistent mixture. You will know need to let it cool slightly to avoid burning yourself! With your hands prepare little balls with the mixture and then coat with the beaten egg first and then with the bread crumbs. Fry until golden and stick a lollipop stick on each ball.
TIP: You can prepare them ahead and freeze. Then simply take them out of the freezer and fry.
