Love chocolate and coconut? Forget the sugar and the hydrogenated fats, and try this delicious recipe:

FOR THE FILLING:

– 1 cup organic shredded coconut

– 2 tsp organic honey
– 2 tsp organic rice syrup
– 1.5 – 2 tbsp organic coconut butter
– 1 tbsp organic coconut oil
– 2 tbsp organic chia seeds
– 1/2 tsp mineral water

 

FOR THE CHOCOLATE:

– 1/4 cup organic cacao butter, melted in a bain marie
– 1/4 cup (raw) organic cacao powder
– 1 tsp organic coconut butter

Sweeten to taste with your preferred organic sweetener: coconut sugar is a great one to use but there’s a lot of different sweeteners you can add in your deserts, try yacon syrup, date sugar, rice malt syrup or molasses, a drizzle of agave, maple syrup, raw honey, dark or light brown cane sugar, raw stevia, fruit juice….The choice is yours.

 

 

Method:

Stir all the wet ingredients together. Then add grated coconut and chia seeds. Stir and knead until well mixed. Put the mixture in the fridge for half an hour.In the meantime, grate cacao butter and melt in a bain marie. Add cacao powder, sweetener and coconut butter. Stir well. Also put this mixture in the fridge for a short while.

Take out the coconut mass and form small heaps with a flat bottom. Put in freezer for half an hour.

Then stick toothpicks in the frozen coconut heaps and dip them in the chocolate mixture, while turning them around a few times, and repeat. Put the bonbons in a dish and put them in the fridge for another hour or so, untill the chocolate is hardened and the coconut mass is somewhat defrosted. Then take out the toothpicks.
