I have to confess I was planning on cooking something entirely different…But my original idea didn’t work out as expected…It happens! So I used the same ingredients and created a new dish that has turned out to be one of my son´s lunchbox favourites!
This is a new version of your traditional croque monsieur and the best part is of course the introduction of spinach. It is commonly known that spinach is rich in iron. But we should not disregard its high levels of nitrates, which help improve our muscular capacity.
TIP: if you want to add some extra fiber, use wholegrain puff pastry.
Preparation time: 15 minutes (plus time to heat the oven)
Ingredients for 1 croque monsieur:
- 3 small pastry sheets
- A bunch of fresh spinach leaves
- 2 slices of your favourite cheese (I used mimolette, which is a French orange cheese)
- 2 slices of turkey ham
- 1 spf olive oil
Method:
Heat the olive oil in a pan and slightly cook the spinach. Set aside.
Arrange a pastry sheet on an oven tray. Place a slice of turkey and one of cheese, as well as some spinach. Cover with another pastry sheet. Repeat the same operation.
Bake in the oven for about 10 minutes or until golden. Enjoy!
