Today I am sharing with you a recipe we all love at home, especially my son!
Eggs are very important in our little ones ´diets as they provide them with protein, calcium and essential amino acids. So let´s get to it!
Preparation time: 15 minutes
Ingredients for 2 kids:
- 3 eggs
- Half a chicken breast
- 1 tomato
- Black olives
- A small can of red peppers (I use piquillo, a Spanish variety full of flavor!)
- 1 spf Olive oil
- Salt
- 6 spf mayonnaise
Method:
Boil the eggs until they are hard (count 10 minutes once the water starts boiling)
In the meantime, cook the chicken breast with some olive oil. Now cut it into very thin stripes and mix in a bowl with the tomato and peppers (also cut into small pieces), the olives, some salt and a spoonful of mayonnaise (I prefer homemade mayo; it is easy to prepare and it tastes so much better!)
When the eggs are ready, let them cool a bit, peel them and cut into halves. Remove the yolks and add half of them to the chicken salad – we will save the rest for decoration -.
You will now fill each egg half with some chicken salad and cover with the mayonnaise. Now decorate using some olives as eyes, some pepper as smiles and the rest of the yolk for the hair.
