Kids love burgers and hotdogs. It is a fact! Well…let´s give them what they want!
These burgers are healthy and nutritious and I assure you your kids won´t even miss a traditional beef burger after trying one!
We will still have the burger bread, and the slice of cheese…we can even have the ketchup (I will post a recipe for homemade ketchup soon!) Oh! And we will definitely have the protein as red kidney beans are a great source of protein!
Preparation time: 25 minutes
TIP: You can prepare the burgers the day before and simply assemble them in the morning. While you are at it, prepare one for you too! You won´t regret it!
Ingredients: (for 4 burgers)
- 4 burger buns
- 4 slices of cheese, fresh tomato, pickles… (optional)
- 500 g red kidney beans
- 200 g mushrooms
- 1 small onion
- Fresh coriander leaves
- Salt
- Pepper (optional)
- 2 spf olive oil
Method:
Chop the onion finely and cook it with the olive oil at a low heat. In the mean time, wash the mushrooms thoroughly, chop them finely and cook with the onion for about 10 minutes.
While the mushroom cooks with the onion, drain and rinse the beans and mash them with the help of a fork. Add the onion and mushroom, the coriander, finely chopped, and salt and pepper.
Now simply shape into burgers and cook in the oven, previously heated at 180ºC, for 10 minutes. Allow them to cool slightly.
Finally, simply assemble your burger adding whatever you like: sliced tomato, lettuce, pickles, a bit of ketchup….Enjoy!
